Polish Salad a’la Caesar by Kwestia Smaku

Ingredients:
300 g green beans
3 slices of Parma ham - OR smoked / dried thin bacon (pancetta)- OR grilled / fried chicken breast
1 / 3 head iceberg lettuce
1 cup basil leaves
1 / 2 cup finely grated Parmesan cheese
 some toast with sliced baguette
Sauce a la Caesar:
2 anchovy fillets in oil
1 teaspoon mustard
1 heaped tbsp mayonnaise
3 tbsp thick cream 12%
1 tablespoon finely grated Parmesan cheese
freshly ground black pepper
Directions:
1. Prepare the sauce - Chop up the anchovy fillets very finely and  add to a small bowl.  Then add 3 teaspoons of oil and 1 teaspoon of  mustard.  Mix in the mayonnaise, cream, Parmesan cheese, and a  large pinch of freshly ground black pepper.
2. Rinse beans and trim the ends of the pods. Drop into boiling  salted water and boil for about 8-10 minutes or until they are tender  (young beans - an early meeting - will boil faster than the “later”).   Strain and after cooling slice lengthwise into halves.
3. Place the Parma ham on a small pan and heat on low for several minute, then cut into pieces.
4. In a large bowl, pieces of chopped lettuce and sprinkle with salt  and pepper.  Add half the basil and grated Parmesan cheese.  Put in the  beans and sprinkle some freshly ground pepper on the chunks of ham. In  some places, put a teaspoon of sauce and spread it on the salad.   Sprinkle the rest of the parmesan, add the crushed croutons with  baguettes. Put on plates and serve.
